Roasted Veggies With Attitude


Ingredients

1 lb. mixed broccoli and cauliflower florets
3 Tbs. extra virgin olive oil
1 Tbs. lemon juice
1 Tbs. minced shallot
1 Tbs. grated Parmesan
1/8 tsp salt
pepper to taste
1/2 lemon zest

Directions

Toss 1 lb. broccoli and cauliflower florets in 2 Tbs. extra virgin olive oil.  Roast on a baking tray at 400 degrees for 20 minutes.  Whisk together 1 Tbs. each of lemon juice, extra virgin olive oil, minced shallot, and grated Parmesan with up to 1/8 tsp. salt, a little freshly ground pepper, and the zest form ½ lemon.  Toss with the roasted florets.
